In the past I've gotten a lot of questions about what I eat. Although I'm not fully vegan, I do eat a plant based diet and eat about 80% vegan. I feel good when I eat vegan and I've had a fun time messing around with recipes that make me feel energized and full throughout the day! I love how quick and simple this recipe is! The brown rice crisps really compliment the museli and provide a little bit more filling-ness (is that a word) to the meal! Normally I don't buy sweetened almond milk but because both cereals aren't very sweet I felt like it would need something to jazz it up a bit.

This is one of our favorites at home for breakfast. It's super quick, easy, and filling! Simply add your yogurt - we like the unsweetened vanilla flavor. And add all of your toppings and wah-la! A delicious breakfast and completely dairy free. Dairy has been killing me since I began pregnant so I searched and searched to find this yummy dairy free yogurt because I was craving yogurt and it sure doesn't disappoint!
Peanut Butter Oats
1/2 C. Bob's Red Mill Quick Oats
1/4 C. Bob's Red Mill Flaxseed Meal
1/2 Ripe Spotty Banana
Spoonful of Salt Free Crunchy Peanut Butter
Handful Frozen Blueberries
This is another one of my favorites. I love that this one keeps me full and fueled through busy mornings. All I do is add equal parts of the quick oats with water and pop it in the microwave for 1 minute. I then add a heaping spoonful of peanut butter and stir that in. Then I top it with a 1/2 of a ripe spotty banana, frozen blueberries and about a 1/4 C. of flaxseed meal and eat it up! So good!!
