For those of you who don't already know
I'm a health freak and I prefer eating vegetarian,
and when I'm real good I love eating vegan.
It's hard to always eat perfect but
I love to cook for Adam and I and I'm always throwing together
recipes! Tonight we had baked stuffed couscous bell peppers.
They were delicious and were pretty
easy to throw together!
Ingredients:
1 box couscous
4 red bell peppers
1 can black beans
1 can corn
1 can diced tomatoes with chile peppers
chopped cilantro to taste
1 Tbs. taco seasoning
1 tsp. ground cumin
Instructions:
Preheat oven to 350 degrees. Prepare couscous and set aside. In a large mixing bowl mix together
corn, black beans, diced tomatoes, cilantro and when the couscous is done cooking
mix that in as well. Mix in taco seasoning and cumin. Set aside. Prepare the bell peppers by
cutting them in half and seeding them. Stuff the bell peppers with couscous stuffing.
Bake stuffed peppers for 1 hour and top with guacamole. (That's what
we did and it was to DIE for.)
